This recipe is for a yeast-raised weck roll made from typical baking ingredients and standard baking techniques
Ingredients:
- 4 cups all-purpose flour
- 2 tbsp. active dry yeast
- 2 tbsp. sugar
- 1 1/2 tsp. salt
- 1 1/2 cups warm water
- 1 egg white
- 1/4 cup caraway seeds
- 1/4 cup coarse kosher salt
Instructions:
- Combine the flour, yeast, sugar, and salt in a large mixing bowl. Mix well.
- Add the warm water to the mixing bowl and stir until a sticky dough forms.
- Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover it with a damp towel, and let rise in a warm, draft-free place for about 1 hour until it has doubled.
- Punch down the dough and divide it into 8 equal pieces. Shape each piece into a round roll and place on a greased baking sheet.
- Cut a cross on the top of each kaiser roll using a sharp knife.
- Beat the egg white and brush it over the tops of the rolls.
- Sprinkle the caraway seeds and coarse kosher salt over the tops of the rolls.
- Let the rolls rise for another 30 minutes.
- Preheat your oven to 425°F.
- Bake the rolls for 20-25 minutes, until they are golden brown and sound hollow when tapped on the bottom.
- Let the rolls cool for a few minutes before serving.
