A recipe for a delicious top-round roast beef that is perfect for a great B.O.W.
Ingredients:
- 3-4 lb top-round roast beef
- 3-4 cloves garlic, minced
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- Mix the minced garlic, chopped rosemary, chopped thyme, salt, and black pepper in a small bowl.
- Rub the spice mixture over the top round roast beef, coating it evenly on all sides.
- Heat 2 tablespoons of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Once the oil is hot, add the roast beef and sear it for 2-3 minutes on each side until browned.
- Transfer the skillet or Dutch oven to the preheated oven and roast the beef for about 60-75 minutes, or until a meat thermometer inserted into the center of the roast reads 135°F (57°C) for medium-rare, or 145°F (63°C) for medium.
- Remove the roast beef from the oven and let it rest for 10-15 minutes before slicing it. This will allow the juices to redistribute and make the beef more tender.
- Slice the roast beef thinly.
