Homemade Prepared Horseradish

Homemade horseradish is quite easy to make if you have a food processor–and are careful. While this looks like something from the grocery store, the flavor is incomparable. Intensely hot and aromatic, this is the real deal.  With no perservatives or artifical color and flavors, this recipe is also better for you!

Ingredients

1 pound horseradish root – peeled, ends trimmed, cut into 1/4-inch dice

¾ cup water, or as needed – divided

⅓ cup distilled white vinegar

1 ½ teaspoons kosher salt

Directions:

Place the diced horseradish in your food processor; add a bit of water and pulse on and off until mixture begins to blend. Scrape down sides of food processor container as needed. 

Continue blending, slowly adding more water if mixture seems too dry. Process until horseradish is finely ground. Wait 2 or more minutes before adding the vinegar and salt; the longer you wait the stronger the horseradiswh will become.. After your wait, add vinegar and salt. Continue processing until the mixture is smooth and creamy or to your taste, adding more water if necessary. then transfer to airtight storage containers and refrigerate.
