Scratch Kimmelweck Rolls

This recipe is for a yeast-raised weck roll made from typical baking ingredients and standard baking techniques

Ingredients:

  • 4 cups all-purpose flour
  • 2 tbsp. active dry yeast
  • 2 tbsp. sugar
  • 1 1/2 tsp. salt
  • 1 1/2 cups warm water
  • 1 egg white
  • 1/4 cup caraway seeds
  • 1/4 cup coarse kosher salt

Instructions:

  1. Combine the flour, yeast, sugar, and salt in a large mixing bowl. Mix well.
  2. Add the warm water to the mixing bowl and stir until a sticky dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a damp towel, and let rise in a warm, draft-free place for about 1 hour until it has doubled.
  5. Punch down the dough and divide it into 8 equal pieces. Shape each piece into a round roll and place on a greased baking sheet.
  6. Cut a cross on the top of each kaiser roll using a sharp knife.
  7. Beat the egg white and brush it over the tops of the rolls.
  8. Sprinkle the caraway seeds and coarse kosher salt over the tops of the rolls.
  9. Let the rolls rise for another 30 minutes.
  10. Preheat your oven to 425°F.
  11. Bake the rolls for 20-25 minutes, until they are golden brown and sound hollow when tapped on the bottom.
  12. Let the rolls cool for a few minutes before serving.
